While I went to Aarhus Central Food Market, and recently tried the raw avacado cake from Ren & Stærk, I wanted to make something similar. I searched for recipes on raw cakes, and found a recipe on a ganache cake, that seemed easy. I just made some changes, because it was an instant move, and I didn’t prepare anything. Haha. So here is my version, and this one is vegan too 😉
Sponge Cake à la Danish Hindbærsnitte
Hindbærsnitte is a Danish pastry with raspberry jam. One of my colleagues made a sponge cake in hindbærsnitte-style, and it was so yummy. I later found the recipe, and made my own vegetarian version – which means this cake is eggless 😉
Servings: 15-20 pieces
Note: This take some time! 😛
Ingredients:
The crisp dough:
- 300 g wheat flour
- 200 g butter (cold)
- 25 g sugar
Sponge cake:
- 250 g butter (softened)
- 150 g sugar
- 1 dl of milk
- 250 g wheat flour
- 1 teaspoon baking soda
- 200 g raspberry jam
Glaze:
- 150 powdered sugar
- Approx. 2 tablespoons of water
- (I prefer the glaze with cocoa, so I added 2 tablespoons of this)
Easy Peasy Mango Cake – Eggless
My mum once made a mango kesari, so I thought of baking a mango cake this time. You know that I’m a vegetarian, and always bake eggless cakes, so I mixed a recipe together and it actually made a very yummy cake 🙂
Servings: 8 large pieces/10 small pieces
Ingredients:
- 250 g plain flour
- 150 g cane sugar
- 175 g butter
- ½ dl milk
- 2 teaspoons baking powder
- ½ teaspoon salt
- 200 g mango – pureed
Strawberry Pie – Eggless

I’ve seen several asking for an easy recipe for an eggless strawberry pie. This pie makes about 8 pieces.
Ingredients:
Dough:
- 150 grams of butter
- 200 grams of wheat flour
- 30 grams of icing sugar
- 1 tbs. of vanilla
The filling:
- ¼ liters of whipped cream – If needed mixed with 1 tbs. of vanilla (I like it, when the cream has this flavor)
- Fresh strawberries cut in halves (as needed)
