This delicious one pot dish has loads of protein and some yummy veggies. You might know, that I really love aubergines and tomatoes too, so I decided to make a mix with these. It is actually something I tried at a cafe long ago, and I liked it so much. So I decided to make something like that – on my own, and you now what? The dish came out very well! 😉
I actually madk a large amount of it, so that I also can have it some for my colleague W and I, for the lunch at work too 🙂
I know, I haven’t posted anything the past 6 months, and I actually haven’t had time for even write something for a moment. More correctly, I even didn’t think about it, and I really regret it right now.
I’ve been doing several things, and I really don’t know how the past 6 months have passed so quickly. This is sick!!
Anyway, let’s start from one point:
Let me start from this fodant rose, which is actually from ultimo march this year. I made a cake for a 25th wedding anniversary, for a couple I’ve known for many years. This family is very close to me, and I felt so blessed and honoured for making the cake for their anniversary. I made a chocolate cake, layered with simple vanilla cream. It was decorated with whte MMF and handmade roses – all on my own 🙂
April is always a very special month for me (not because of my birthday, but because of the tamil new year, and the past few years also because of this educational programme, were I work as a lecturer. I have been lecturing among with my former lecturers, and it’s always been a pleasure and a blessing, to be a part of this. I really thank the organizer for giving me this opportunity. My sister from another mother, and my very best colleague has birthday in July. So I made this kind of surprise gift package for her, with a handmade birthday card by myself. Will be posting a full post about this soon 🙂

Slowly moving to August.. I got a brand new harddisk for my computer, so I just changed it. Very easy btw. Now my laptop is much faster 🙂

My bestie and I went to the Himmelbjerget in Ry (Skanderborg). Best weekend so far, I love this place (another detailed post coming soon).
And later that they, we went for a walk in “Aarhus Ø” or Ø-Haven in Aarhus.Nice place with beautifl apartments/architecture.
Then, finally, it was my time to celebrate the summer holidays. I decided to combine my holiday with the Thiruvizha in the temple in Herning, as this is very close to and important for me. I’ve been designing my own saree for my performance during this festival. And here are some picture from that.
I got the opportunity to teach at the Syddansk Erhvervsskole in Odense. I was taking lectures in Audiological English and Audiological Technique/Acoustics for those taking the educational programme for becoming audology assistants. This was quite fun actually.

I love June. June is one of my fave months – only because it’s here the summer begins 🙂
This year, June has been an amazing month. Loads of sunny days, which means a lot of happy people. Even I could feel the change, though I’m normally one of the very happy types! 😉
One of the best things that happened this month is my dear niece, Vadz’, graduation from the HTX. I’ve always seen her as a little babygirl, always smiling, happy, and never angry. But of course, we’re all human beings, and everyone becomes a grown up some day – and I forgot Vadz also did! Not to be mean, but her cute expressions never made me think further 😛 😉
Since her family moved back to Denmark, she and her sister had a lot of challenges, and it was definitely not easy for Vadz. But she never gave up, and I think she managed it very well, and showed all of us – especially the “haters” – what she really can, and what her strength is. Last week she graduated successfully from HTX with great examination results, and made us all proud. Vadz, you made me so proud and made me cry.. almost 😉 I hope the very best for you, may all your wishes come true, and please be something big, and earn a lot of money to me 😛
Yes, our very own Vads is now a “student”, and she looks stunning with her new “studenterhue” with the navy ribbon.
Another great thing that happened this weekend was a very beautiful exhibiton made of chocolate. This was made by mr. Jeyaratnam Kanagasabai from Ikast, also known as Jeya mama. He’s been working on this project for the past 2 years with the help from his family. My parents and I went to their home this Saturday to see the exhibition. God, I was amazed by his hardwork! He had made 6 beautiful buildings in only chocolate, including the Eiffel Tower, Viborg Cathedral, and a football stadium.
I was thrilled and very surprised to see all these beautiful things, and it was like, I didn’t want to keep away my eyes from them all.
I wish Jeya mama all the very best with his project, it’s great that a TAMIL is doing such a great job 🙂
I know, many of us love to do some great shopping, especially when it’s cheap 😉 You know what? Recently I had a smaller holiday, so my bestie and I went for shopping in Germany. Yes!! More correctly we went to Neumünster, a town 68km North of Hamburg. Neumünster is famous for its designer outlook part, and I have heard about this place before, but didn’t think much of it. Recently my student told me about her visit, and I immediately wanted to visit this place 😉
Luckily we had time for it, so we drove to this city and did some shopping. The weather was not that much good, but so what? We still had an awesome time together 😛

We had some pizza for dinner, at the Marché Mövenpick. Quite good, actually.

We also went to do some shopping in Odense, and even visited the Brandts Museum in Odense. Here we had the opportunity to enjoy a kind of sensory exhibition by Trine Boesen. Quite interesting 😉

Last week a friend and I went for shopping, and we later met with another friend for a small girls’ date, and went out for dinner. It was so good to spend some time together, I felt like it has been ages since we last did it. Of course time flies by, and we’re all busy with work, fitness and etc., but I always love to catch up with my friends and share good stuff. This time was very inspiring and funny too, as we, all 3 of us have fitness as our common interest. Sharing useful tips is something we really love, and of course, we talk about other things too 😉
As I told you, we went for shopping, and both my friend and I have been looking for some new sun glasses. I actually liked the club master design, and wanted to buy a pair of those. Luckily Thiele in Bruuns Galleri had some offers, so I found what I wanted and got 25% of discount 😀 Also my friend ordered a pair of these 😉

Experimenting with food is something I love to do. You get so many different tastes and very lovely dishes out of this way of cooking. Honestly, cooking was definitely not my cup of tea until I turned 22-23 years old. Really don’t know why, but I thought it was difficult and very boring to live alone, and be cooking only for myself. But later, I changed a lot, and cooking became a kind of hobby to me. Many people ask me, if I have any difficulties in being a vegetarian, as they think it’s limited how delicious food vegetarians can make. But they’re wrong! There are many ways of getting nutritious, and at the same time lovely food being a vegetarian (or vegan). Experimenting with the flavours is the way 😉
Today I tried something new with the chia pudding for breakfast; I’ve earlier shared a recipe for a simple pudding. I actually used this pudding today, but added some other healthy things into it, and made this delicious chia-oat pudding instead 😉
